Friends I am back from a long leave. I went to my mother place for celebrating Navratri.So here is one of dish what I have prepared for Navratri.
Cashew Coconut Burfi
Preparation time: 30 minutes (Approximately)
Cooking time: 45 minutes to 1 hours (Approximately)
Serving: 4-6 persons
Ingredients
Cashew Nut- 1 cup
Grated coconut-1/2 cup
Milk-1 cup
Ghee-3/4 cup
Sugar- 1 ¾ cups
Cardamom powder-1 tsp
Method
· Soak cashew nut in warm water for 15 minutes.
· Drain water after 15 minutes.
· Grind cashew nut along with milk.
· The paste consistency should be like Bombay rawa.
· Heat ghee in thick bottom pan.
· Pour cashew nut paste and coconut into this.
· Keep stirring till ghee starts leaving edges of paste.
· Once ghee starts leaving edges.
· Now start adding sugar slowly.
· Sugar will get dissolve and the paste will become little thin.
· Keep stirring.
· The mixture will starts getting thick in 10-15 minutes.
· Add cardamom powder in this.
· Keep stirring the mixture till it is thick enough for burfi.
· Now grease a plate to pout the mixture.
· Pour the mixture to grease plate.
· Flatten the mixture with a help of flat ladle.
· Leave it for 10 minutes or so and allow it to get cool down.
· Cut in diamond or square shape as you like. Let cool completely.

I like this Cashew -coconut combo..also the sweet appam
is very nice. We only know Arisha or kakera , but this flour and rice flour combo looks great .
