GAJAR KI KHEER ( carrot cooked in thick milk)

Carrot, a vegetable which is rich of 'Vitamin A' and enhance the taste of all dish in whichever it is added. Often I used carrot in my cooking because my daughter likes this very much. Today I made for her Carrot Payasam. She likes it lot.

CARROT PAYASAM Or GAJAR KI KHEER

Preparation Time- 10 min
Cooking Time - 40-45 min

INGREDIENTS:-
Milk - 1 liter
Carrot- 200 gm
Sugar- 300-400 gm ( or as per taste)
Cardamom powder - 1 tsp
Cashew Nut - 10-15 nos
Raisin- 15-20 nos
Ghee- 2 tsp

METHOD:-

  • Wash and peel carrots
  • Grate carrot and keep aside.
  • Heat ghee in heavy bottom pan.
  • Fry cashew and raising in ghee and remove in a plate.
  • In left out ghee and fry the grated carrot for 5 min.
  • Add milk and keep in medium heat.
  • Let this get cook in milk for 20 min.
  • Add sugar and cook for another 10 min
  • Switch off flame add cardamom and nuts.
  • Serve chill.
