VEGETABLE KURMA ( WITHOUT ONION GARLIC)

Being daughter in law of an Iyengar Family, there are some days when we have to avoid onion garlic in food.  But still tongue demand for tasty food. I tried making Vegetable Kurma without adding onion & Garlic and it came out very well.See here this is it:-

VEGETABLE KURMA

Preparation Time- 20 min
Cooking Time- 40 min

Ingredients:-
Small cube of mixed vegetables- 2 cups ( I have used carrot, beans, peas, capsicum, cauliflower and potato)
Oil- 4 tbs
Tomato - 2 medium sized ( Peeled)
Ginger- 1 1/2 inch
Cumin seeds- 2 tsp
Coriander powder-2 tsp
Chilli powder- 2 tsp ( or as per taste)
Garam Masala- 1/2 tsp
Cardamom - 2
Cinnamon- 1 inch
Bay Leaf- 2
Cashew nut - 10-15
Salt - to taste
Hot water- 1 1/2 cup

Method:-
  • Wash vegetable and keep aside separate.
  • Now heat a pan with 2- 3 drops of oil and just stir fry all vegetable separate- separate with adding salt in it.
  • Grind tomato, cumin seeds, ginger and all dry spices powder.
  • Heat oil in a thick bottom pan
  • Add cardamom, bay leaf and cinnamon in this.
  • Fry this for 10 sec.
  • Add the grind-ed tomato in this and fry till raw smell of tomato goes.
  • Finely grind cashew nut with adding little water in this 
  • Once tomato is done add cashew nut paste in that and fry for 5 mins.
  • Add all cook vegetable and salt in it.
  • Cook with this masala for 5-7 mins
  • Add hot water and cover with lid .
  • Cook in medium heat for 10-15 mins
  • Garnish with Coriander.
  • Serve with chappati, paratha, iddiyappam, pulao etc etc.
VARIATION
  • Butter taste more good in this instead of oil.
  • Paneer and baby corn also taste good with this.
